How to Enjoy Life when you have Celiac Disease, or an Allergy/Intolerance to Gluten and Dairy


Let me start by saying that there is life after a doctor's diagnosis, or even a suspicion of being gluten or dairy intolerant, or having an allergy to wheat. More than 3 million people have been diagnosed with celiac disease and it is suspected that more than 20 million people in the US are gluten sensitive, according to a 2008 study at the University of Chicago. reported that 1 in 133 Americans have symptoms of celiac disease, and this problem, once mostly affecting people of European descent, now reaches across Asian, African and Latin ethnicity.
